I used to think I shouldn't mix lor mee too much, otherwise the gravy would turn watery. When I ate this, I learnt that it's because the other places didn't know how to make it properly! No amount of mixing would change the consistency of the gravy here. It's flavourful- savoury but not salty, amd doesn't make you feel stuffed because of starch. The ingredients are fresh, the fish is fried so it's crispy yet the flesh is not dry. The fatty part of the pork is just nice and not much. The beansprouts are crunchy without the raw or weird taste. The noodles are cooked just nice. I personally prefer the original flatter yellow noodles for lor mee. The garlic is fresh, the chilli looks powerful but doesn't burn, the vinegar is proper (not cheap) vinegar because it tastes smooth and not just blindly "sour".
